Mouth-Watering  THAI CHICKEN SATAY SKEWERS  with Homemade Peanut Sauce

Preparing the Chicken


Pound the chicken breasts to an even ½-inch thickness between two pieces of wax or parchment paper. Cut the chicken into 1½-inch pieces and set them aside.

The Marinade


In a large bowl, make the marinade by combining all the ingredients

Adding the Chicken


Add the chicken pieces to the bowl and mix until the chicken is evenly coated. Cover the bowl with plastic wrap and marinate in the refrigerator overnight.

The Peanut Sauce


Whisk together all ingredients and cook over medium heat and cook until desired thickness. 

Making The Skewers


Thread the chicken pieces onto skewers.

Time To Grill!


Place the skewers on the grill and cook for about 10 minutes, turning once, or until the chicken is cooked through.



Serve the chicken skewers with the Coconut-Peanut Sauce and lime wedges, if desired.
